Fresh ginger sauce for steaming
Place all ingredients in a food processor, and puree until smooth.

1 and 1/2 cups of soybean paste

4 ounces of fresh garlic

2 ounces of fresh hot chiles

1 bunch of fresh coriander (roots and all )

1/2 cup of fresh lemon juice
-
1/2 cup of sugar
-
1/2 cup of fish sauce
-
1/2 cup of soy sauce
-
4 ounces of fresh ginger
-
1/2 cup of water
This recipe makes much more than you will need for one meal, however the size allows the use of a food processor and the sauce will keep for weeks in the refrigerator.
The soybean paste referred to is a thick paste that gives the sauce body. If unavailable simply use a mild hummus to provide the same consistency..
